Dinner Idea: Simple Homemade Meatballs

  • 1 lb ground beef

  • 1 large egg

  • 1/4 cup breadcrumbs (or crushed saltines)

  • 1/4 cup grated Parmesan cheese

  • 2 cloves garlic, minced

  • 2 tablespoons fresh parsley, chopped (or 2 teaspoons dried)

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1/2 teaspoon dried oregano

  • 1/4 teaspoon red pepper flakes (optional)

  • 2 tablespoons milk or water

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

  2. In a large bowl, combine the ground beef, egg, breadcrumbs, Parmesan, minced garlic, parsley, salt, pepper, oregano, and red pepper flakes. Mix until just combined—be careful not to overwork the mixture.

  3. Add the milk or water to the mixture. This will help keep the meatballs moist.

  4. Form the mixture into balls about the size of a golf ball and place them on the prepared baking sheet. You should get about 12-15 meatballs from 1 lb of ground beef.

  5. Bake in the preheated oven for 20-25 minutes, or until the meatballs are browned and cooked through.

  6. Remove from the oven and let them rest for a few minutes before serving.

Serve these meatballs with your favorite sauce over pasta, in a sub, or enjoy them as they are with a side of veggies or a simple salad. Enjoy!
